RICKSHAW celebrates stellar new menu.

Innovative dishes and much-loved favourites wowed guests on launch night at the Corinthia Palace, Attard, Malta

Rickshaw Restaurant, within Corinthia Palace Hotel & Spa in Attard, is reputed for excellent Far Eastern food. Always known for their fresh approach to Oriental cuisine, Rickshaw's new menu delivers on every level with an abundance of dishes to tantalise us all.

Corinthia Palace Executive Chef Stefan Hogan said: “We know that diners constantly look for new and exciting things to try, and this is exactly what this menu provides. Of course, all of our favourites have retained their rightful positions, but we have also added to the menu new dishes that are bound to delight those eager to try something that little bit different.”

There's no doubt that Chef Hogan has considered all palettes and tastes, with an abundance of vegetarian, vegan , and yes, very healthy meat dishes too. But don't be concerned, if it's sticky ribs and deep fried shellfish you favour - all is available on this brilliantly diverse menu.


So what's new on the menu?

Squid-ink tapioca crisps with tuna tartare is a delight - fresh, zingy and as delicate as it should be, and the steamed dumplings - just out of this world.

A clever addition to the well-loved mid-course of crispy aromatic duck with pancakes, is the introduction of a mouth watering ham hock - braised and pulled with Chinese five spice, yellow bean and a soy broth, served with steamed bao buns. A hit for us!


Main dishes can sometimes play second fiddle to starters, but it wasn't the case at all with the slow-cooked 72-hour beef ribs, the Iberico Segreto pork cooked Cantonese style, or the steamed wild Sea Bass. All of them extraordinary.


Fabulous new desserts include a Pandan leaf chiffon cake with white chocolate, Macao cocoa biscuit, and coconut ice cream. Inspirational and yes, it really does taste as good as it looks!

“The response to the menu has already been fantastic,” says Chef Hogan, who worked on its development with the rest of the Rickshaw’s highly-talented team over the course of a few months".
