Lavender Collins

This lavender cocktail is a spin on a Tom Collins made with this herb! It’s a gin drink that’s sweet tart and bubbly, with a floral finish.
Condiments

3/4 oz Lavender simple syrup

1 oz Lemon juice

1/2 cup Soda water

1 ½ ounces gin

Pimm’s Cup
Pimm’s is a gin-based liqueur with a deep red color that is flavored with ‘herbal botanicals,’ spices, and caramelized orange. It’s in the realm of a digestive if you ask me which means, you’re not going to feel bloated after a few!
Condiments

1 lemon, thinly sliced

1 Persian cucumber, thinly sliced

1/2 cup strawberries, thinly sliced or quartered

2 tablespoons freshly squeezed lemon juice

3 ounces Pimm’s No. 1

6 ounces Ginger Beer
